Coconut milk

Postby trubrit » December 21, 2010, 9:02 am

The price of this has shot up in the last week with most major supermarkets having completely sold out of the tinned and carton versions. According to one manager I spoke to they don't anticipate getting further supplies in until the New Year .
As a result of this the price of the fresh ground product in the markets has shot up from the normal 18/20 bht a kilo to a record of 70/80 bht. So if you love a coconut milk curry, as I do, I suggest you buy it when you can .

The reason...
Coconut production in free-fall

http://www.bangkokpost.com/business/eco ... -free-fall

Although not really a true substitute if anyone loves food made with coconut milk & cannot find any then the Dutchie brand plain (unflavoured) yoghurt that comes in the blue & white pack can be used.
Add it immediately before serving & stir in, it suffers from separation if you try to use it during the cooking process though.

I use I Care cereal cream as a healthy alternative to coconut milk. It's made from rice bran and soy protein and tastes the same but has zero cholesterol/trans fat. It comes in concentrated cartons so one small box goes a long way. ;)

I have never tried either Bob's or Lee's alternatives but when my daughter comes to stay, she's allergic to coconut, my wife uses undiluted Carnation milk. Now I am definitely not a galloping gourmet but I can hardly tell the difference .
