Do i need a toursit visa?

The duration of my next trip will be for 35 days, arriving in Udon and departing from BKK.
Will it be ok to just arrive and get a 30 day visa on arrival and do a border crossing into Laos (which i intend to do anyway) and get another 30 day VOA when i cross back into Thailand?
Or, do i need to get a 60 day doubly entry tourist visa before i leave, due to my departing flight being 35 days after arrival and the fact i will be crossing into Laos and then crossing back?

i hope someone understands what i am asking as i think i have just confused myself!

You can certainly get a VOA on arrival in Thailand & then go to Laos & get another VOA on arrival back in Thailand. As this would get you 60 days it is more than enough for stay. I do not believe the fact that you departure date is 35 days after arrival will even be checked by anyone. And if it is you can explain that you are going to Laos...

Just a word of caution, unless they do things differently downunder.

"Any visa exempt entry issue has the requirement that you present an outbound travel ticket to a country your passport allows you to visit within the 30 day period of your visa exempt entry stamp. Any border and/or airport can enforce this rule at any time. In fact Bangkok Airport has had active enforcement recently. Many airlines will not even fly you to Thailand without you showing them such travel documents (or a visa for entry). The simple way is to obtain a tourist visa prior to travel if you plan to stay longer than 30 day."

Unless your itinerary calls for something different you may want to check with the airline you are flying out on.

You may want to play it safe and obtain a Single-Entry Tourist visa (good for at least 60 days). Or check with your nearest consulate for other options. Or PM Wokkawombat :D
