trubrit i have grown potatos in the u.k. and there a potato is white from the time it forms on the root. a growing poatato will only turn green if exposed to the sunlight and then green chlorophyll in formed in the skin. for all your potatos to be green would suggest they were all exposed to the sun or there is something in the growing conditions round here that turns them green . what that could be i have no idea.

On the subject of potatoes.Whilst not an expert myself, my friends at the Agriculture college have given me the following information .It is not allowed to import any as a vegetable for sale . However Thailand has an agreement with the Netherlands to import seed potatoes every year , normally in October . The main variety is the Bintje. This is the one most commonly seen in supermarkets and is mostly grown by farmers in the Chiang Mai region . However in recent years owing to demand from some hotels and high class restaurants they have permitted import of another variety, the Spunta, which is more akin to the ones we all know from back home .It is also sold in some supermarkets, mainly in Bangkok. It is of course more expensive and is often described as imported, but only the seed comes from abroad, it is still cultivated here .There is a third variety on the approved list and that is the Kennebee. This is solely used in the production of what we Brits know as crisps, but some from the US call chips .Don't ask me how to tell the difference in the shop . I guess the price must be the give away, but remember TIT .
Just out of interest I attache a recommended way of cooking and the different varieties best for each method . Unfortunately the ones imported here do not appear on the list .

I must admit Mr L, your chips are the best that I have tasted (eating out) in Udon ...... keep up the good work.

human test plate full of mixed local spuds chip sized mixed with frozen french fries.i gave this to a table of 6 thais .1/4 of the french fries were left after the last chip went south .the fries went to but no 1 choise was the fresh cooked chips.less crisp 4 sure .
