i am only eating the dry type, well fried , my favourites are meng tjingliet, and takketein(grasshoppers) , i am not in to the thick mealy tasting ones ,like dakdei , ( silkworm) , noun mai phai ( bambooworm),or the mengda (it is meng not mang), this is probably what wayne747 meant, as according to my wife they do not eat cockroaches...strangely enough they think this is dirty animal and stinks....
anyway enjoy your food what ever you are eating....

Kpokei means 'Tukatan', not 'takketein', for grasshopper. Think Tukatan Chollada, the young singer although in Lao/Isaan 'grasshopper' is 'Tukatome' or 'Tukatone', I forget which. Cockroaches are dirty insects (not animals). Funny, Mexicans like eating them but, as you say, not the Thais/Lao.

sorry laan ya mo,
i am writing phonetic, as the thai or isaan people pronounce it, & 100% it is takketein, my wife does not know what tukatan ( chollada?)tukatome, tukatone?? means , or are you staying maybe near the border or have wife from cambodia she asked? , never mind how you call it, as long as you like it....

ตั๊กแตน ชลดา: Tukatan Chollada, the name of the young singer, and the one featured in my avatar. Tukatan means 'grasshopper'. Thai and Isaan people pronounce the word differently. The one I have, Tukatan, is the way the lady herself pronounces her name, and is the way Thais pronounce it. I have met her. In Isaan, it is pronounced 'Tukatone' or 'Tukatome'. I think your 'Takketein' is probably her 'Tukatan' although the 'etein' seems to be the problem. Tukatan Chollada was born in Khorat. Is this getting confusing or what?

Maybe Udon pronunciation is different than Khorat or Buriram or Nakhon Phanom pronunciation. Who knows?

'How much wood would a woodchuck chuck, if a woodchuck would chuck wood'? I think we have entered that territory. 55555

Oh, I am not going to eat grasshoppers be they Tukatan or Takketein, although I have eaten other insects.

Interesting, thanks. What is a meng tjingliet - in English please. And a mengda ?
I like the crickets - what is that in Thai.
About cockroaches, you may be aware there are various species. The common German cockroach Blatella Germanica, and the oriental cockroach to mention a few.
On the picture here on Udonmap I just saw something that looked like giant cockroaches - my mistake if it is something else.
The would-be "cockroaches" are in the front row, plate no 2 from the right.
Maybe a kind soul can give a run-down of the entire menu =D>

A little info on Mangda. Source: Appon's Thai Food website

"Mangda are large insects about 8 cms long, that live in rice fields in Northern Thailand. During the evening they fly around lights and are easily netted and eaten. Mang-da is also the name given to boyfriends who live off their girlfriends. They get the name because they flit from light to light. Similar to the English phrase 'bar-fly'. Someone is said to be a mang-da if their girlfriends work and they don't.

Uses:
They're are pounded and used as a popular flavouring in many dishes, a very common Thai ingredient is Mang-da flavour Nam Prik (spicy chilli paste used to add flavour and spice to dishes). You can even get this is from Asian grocers, look for Mang-da flavoured chilli pastes.
They are also dry fried or grilled and eaten as is, removing the shell and legs."

Lets remember eating most of these fried bugs isn't that big of a deal all you taste is the salt and flavorings added, and of course you get the crunch!!! Just like a chip, or crisp if you're british, just need to get over the fact you are eating a bug!!!!

I googled a bit too.
It is a waterbeetle, not a cockroach.

Some more info below.

Now I just need to find the stall and courage :pirate:
