Pork is plentiful in Thailand but getting a cut like Gammon will be very hard unless you can find a German Butcher. I believe there is one in Nong Kai but do not know of one in Udon. Welcome to the Forum Rickymaus :D

I've eaten gammon steak, but don't know exactly what it is. I think it's a slice from the pig's shank and is pan fried. Can anyone clarify this?

FYI - There are at least two German restaurants, Kate Raunch and Nobbi's, among the Udonmap sponsers.

In the US the shank is a "ham." The grocery store I frequent usually call it a "picnic." Ham steak slices are commonly available in shrink wrap.

So "Gammon" refers to any slice from the hind joint? No special treatment other than it is likely sold as cooked?

Despite all of the wordy descriptions - for Americans - Gammon Steak isn't much different than your regular, run of the mill, uncured, ham steak....
