Well heeled and better off Thais tend to have more cosmopolitain tastes. There are plenty of wealthy local Thais in Udon, even though the city may not look like it on the surface.
As for the lamb, I used to take a customer to the Novotel Soi 33 for lunch buffets. He did not eat beef for religiuous purposes, though would definately pile on heaps of lamb, each and every time, as he had a crazing for such meats.
I dare say the target market of Good Everything is probably 90% Thai, and maybe 10% farang. Just like at Piccola Roma where Vittorio always says his market are the Chinese Thais, not the westerners, even though of course the menu is loaded with pasta etc. If Thais are willing to pay Good Everything's prices, why should they lower the price to attract a few more budget conscious farang (of which I am one).
