Lactose-free Pizza - Where to buy?

It's been over 12 years since I became severely lactose intolerant and at least that long since I had a slice. It was a sunny and hot Wednesday afternoon in Manhattan. Nothing like a NYC slice of pie... ;)

Anyway, with all the boutique restaurants around Udon, I am wondering if any of them cater to those of us who are lactose intolerant. I am looking for pizza specifically, but would also like to know if any are actively catering to us.

I would think it would be a minor miracle if anyone caters for this KHONDAHM.

I doubt, in the extreme, if there is actually a customer base for this type of product that could sustain a business.
Just about your only hope might be to convince a place making their own pizza to cook yours for you in their oven.

I am not sure exactly how lactose free you require your pizza, but if it includes a complete dairy free base then I am not sure that half the ingredients can be found in Udon, without even starting on the issues of the topping.
An example of a lactose free base...
2 tsp. dry yeast (1 packet)
1/2 c lukewarm water
1/4 c amaranth flour
3 3/4 c white rice flour
1 1/2 tsp. kosher salt
2 tsp. Ener-G Egg Replacer
1 packet Knox Gelatine
1/2 tsp. xanthan gum or guar gum (optional)
1 Tbsp. mixed dried or finely chopped fresh oregano (optional)
3/4 c cold water, plus more as needed
1/4 c olive oil, plus more as needed

OT's not seen lactose-free-anything in Udon, so pizza seems unlikely. Looks like you'll have to wait till your next trip to the States or DIY if you can source the ingredients. Anyway, trying to find a decent pizza of any description in Udon is a difficult task. Everyone has a different idea of what a good pizza is.
