Although it's been a few years since I rode trails, there was no better 35km trail ride than the one to Bee Cave Temple (วัดถ้ำผึ้ง) (75km roundtrip if you start from the airport)
https://www.google.com/maps/place/Wat+T ... 6e75217a68
My starting point was the Kilo 18 intersection on the Udon-Nongbualamphu Hwy k. 18 17°19'20.29"N 102°38'54.16"E
Ride a paved road to 17°18'18.72"N 102°40'8.16"E turn right. After you go about a km, ask some of the villagers for Wat Tham Peung or you may see a sign for the temple.
From that point, you're off-trail.....sand, steep hill up, rocky trail through shaded forest to the temple with a sweeping view of Udon from the peak.
On your way down, you're going to try to triangulate back to the highway at 17°17'54.56"N 102°37'40.29"E (thereabouts)......which means coming down the mountain a different way than you went up. The trail down is a blast....some relatively steep, rocky areas, some sandy, most all shaded. You'll use every gear on your bike......and wish you had a few extra. By the time you get back to the highway, you'll be ready for a bowl of duck soup.....which is located at about kilo 20 as you're heading back to Udon.
Again, it's been a few years since I've been out that way.....but plenty of other excellent biking trails (off-road) in that general vicinity.
The last time I visited the temple, there was only one monk who came down each day to do his daily village morning rounds. He doesn't speak English, but it doesn't matter much. He'll share whatever he has with you.....or at least offer you some cold water. Behind the temple are some very impressive caves.....and more trails.

another flat land trek would be circumnavigating Han Khuphawapi lake also known as Tale' Bua Daeng (Red Lotus Sea) located about 45km south of Udon.. Per Google Map the flood dike around the lake is bikeable.. The trail overlooks the lake with views of fishing rafts.. On the other side would be vistas of forest and rice paddies.. The trail passes through a number of villages all which would have stores selling drinks... https://www.google.co.th/maps/place/Unn ... d82edcbc50

The ride up to the highest points around Udon...Phu Foi Lum and Phu Choi Fa are all paved, but both offer off-road trails alongside the main road. Both rides are visually pleasing and offer steep grades. .......difficult on the ride up, but 57kph on the way down.......if you like.

and Phu Foi Lom Eco Park has a nice camping ground, camping cottages and a decent restaurant.. There are kilometers of dirt roads around the central park area that connect over the hills to 2315 that goes back up to Nong Wau Sau or south towards Ubol Rat Dam..
