Not easy to recommend really Michael.
It depends on your system & the scanner & the software making the correct 'fit'.
Usually the software that comes with scanners is pretty poor. The manufacturers are in the hardware manufacture game, not the software game.
Also the OEM software will probably be trying to achieve two completely different things.
OCR scanning (or creating editable text from scanned documents) & also photograph scanning.
It is not something (scanning) that I have tried for years as I was always disappointed with the time it took & the results achieved. Plus digital photography became very cheap & photographic transfer via a digital device was just so easy.
VueScan has got a good name for itself in the scanning industry though & is downloadable & free on a trial basis.
http://www.hamrick.com/If that does not work for you then I think it is just a matter of doing a Google & then slowly working your way through the software available until you come across something that works for you. I would be extremely reluctant to actually PAY for something without trying it first.
