Bloody lovely

4 stars (out of 5). Loved the crunchy pastry but the filling lacked flavour (nae ingins in it).

That would be "Onion" in Jokenese .. and claiming that highland scotch pies are the same as Lowland .. which we now know is folly .. it appears from my investigations each tartan clan has their own recipe for Scotch pies .. with the strangest being in Abroath (where ever that is) .. where they actually use pigeon (with onion) instead of lamb without.

BTW the haggis shooting season starts on August the 12 th and coincides witht he UK grouse season.

I think he ment a Smokie not a Pigeon - maybe misheard?

So easily swayed. Have to congratulate you on a fine looking effort. Need to get into town and purchase a few dozen. Any idea if they freeze ok or too early to tell.

Having seen the recent plight of the Scottish fishermen I'm a bit worried that I may have had a bit to do with their failing industry........

Many years ago a young statts (explorer extraordinaire) ventured North to the frozen wastes of Berwick on tweed with a crowd of mates to Shielfield Park to a) watch Berwick v (Clydebank I think??) and b) Berwick Speedway v Romford in the evening. Being a bit crazy in them days we ventured into a local eatery early in the afternoon and purchased some 'aggisunchips ta take away. Needless to say after one bite every single item of every meal (except the chips) ended up sinking (very quickly) to the bottom of the River Tweed. I'm not sure what eco effect tripling the salt content of the river had, but i'm pretty sure half the fish population would have committed suicide if they had tried to eat it

Statts
Just in case you hadn't notice Berwick upon Tweed is still on the English side of the border. I would also bet that someone who was brought up to think munching a faggot, sucking on trotters and slurping jellied eels is the way to go does not really have the gastronomic skills to appreciate another Nations offerings to the world of food.

Next will be better for sure , the only problem is I only have 10 pie tins for that design ,so only 10 at a time I'm afraid. Going shopping in the morning so I'll pick up a few kg of lamb. They should freeze well

Down to my last Scotch pie .. basically its a Lamb burger inside a pie with the pastry very crunchy n hard similar to a Brit pork pie pastry but thinner harder n no jelly ..

Lunch is served .. quick and easy with baked beans on top and a squirt of HP sauce .. marvelous.

looking forward to the next batch ..with onions ????

Spices for tam's perfect Scottish pies = mace, sage, rosemary, thyme, oregano and heaps of white pepper.

To make the meat less lamb burger-like, add some beef stock to the mix. I reckon Dean's excellent harder pastry can carry a moister meat. Otherwise, one can inject some beef stock into the patty (through the hole) before storing in the fridge or before heatin 'n' eatin' it. I use a small syringe that originally came with chocolate in it that my youngest bought from the mom 'n' pop sweetie shop next door.

Second batch done , added a bit more stock than last time and more white pepper. Plus onions that I softened by frying in butter. When making a new style of pie I generally try 3 recipes and end up with a combo taking the best part of each

Cant wait to hear how your "perfect" yet amateur made pies compare to the master bakers professional PFs creations ..

I may too pop by to sample one today or tomorrow .. orders coming in so DM a tad busy n will be leaving Udons fair shores (and my intersection monitoring tower ) in the next day or so so cant confirm.

Enjoy Tammy ... hope you take your pie judging seriously .. fair n balanced no bias ..OK

Dropped by and sampled PF's Scotch Pie V2 (history tells us the V1 only reached as far as London) so this improved one can probably clip the outskirts of Nongbua Lamphu. Healthy (?) portion of baked beans, a dab of HP sauce and a Savanna cider to wash it down. Elevated to 4-and-half stars (out of 5) as the butter-fried onions and extra pepper have made a flavorful difference.

Not to sure about a pair of otherwise unidentifiable "Scottish sounding" chaps that apparently dropped by earlier and acquired two each of these currently limited edition culinary delights and notably ONLY these pies. We thought we had the UM Scottish diaspora pretty much nailed down but as Dean suggested, these may be forum lurkers. We may need to enlist the assistance of DM, the Scunthorpe constabulary's greatest miss, to help us suss out who these deep cover Jockinese are.
