Villa Market carries both grass & grain fed Aussie beef. I'm sure they grind up some for you if you ask.

Heres a fella hanging out for a plain Beef sausage, or some Rib Eye, and to think I have small herd of Murray Grays back home in the South Pacific, happily chewing thru my grass.

My experience with living with some Kiwi boys in Bondi in the early 70s was that 99% of NZ grass was smoked, rather than eaten.

The cows had to look elsewhere.

Nothing like abit of Aussie or Kiwi beef on the BBQ..
If it wasnt for this lurg going round, I would be in Melbournestan about now having a ruddy BBQ with my young guns.

Panfood might have it Alfie, easy to miss shophouse on left just as one crosses the highway to enter into Nongsamrong from Nongprajak.

I was also empty handed at Makro this week, bumping into Papafarang who sent me to Panfood. We enjoyed some NZ grass feed ribeyes from there, and believe I saw minced in their freezers.

Most Thai cattle are grass fed. Some farmers graze their cattle on free roadside grass every day. I have always thought that grain fed cattle were far better. More flavor and much more tender. Am I wrong?

Afraid so - in todays Times :

One big difference is in the style of beef. American diners tend to prefer softer, grain-fed meat but Hawksmoor specialises in pasture-fed beef that focuses more on taste than texture.
I was born with nothing and still have most of it left

I concur with you glalt. I grew up on a Midwest (Missouri) farm and we raised both beef and dairy cattle. We butchered our own beef as well as marketing it. The beef cattle grazed most of their life and then were grain-fed to finish. I still much prefer the grain-fed Angus or Hereford beef. I don't dislike grass-fed beef I just think grain finished beef is better.

I'm not sure what this farmer claimed was a fact. He told us that the sun makes beef tough. The cattle he raises for beef had never been outside the barn and they were finished on grain. My dad and his three brothers always bought beef from this guy, one year a front quarter the next year a rear quarter. That beef was great.

Maybe one of the problems with tough beef is that the butchers have no idea how to age beef. It is still quivering when you buy it.

Years ago in Kalida, Ohio a guy had a restaurant he called the Black Angus. He had the absolute best steaks in the area. He had that place for more than 20 years when a chain was also called Black Angus. They sued him for using that name. When it went to court, the judge threw it out and made Black Angus Inc pay all the expenses and attorney fees. The reason I mentioned that is the owner aged all his beef in a carefully temperature and humidity controlled room. He once showed that room to a former friend of his. That friend told everyone the beef was rotten and smelled bad. Fortunately people ignored that guy and customers still needed a reservation on weekends.

I've never heard of that method of raising beef cattle. We always provided a shade area for the cattle but sunlight was considered a requirement for their overall health. Dairy cattle especially need sunlight for good maintenance. Your farmer is using a method that I'm not familiar with and I'm pretty sure it's something that nearly every beef producer in the States is not currently engaged in.

Confined rearing of poultry is pretty common and rearing of confined cattle may be something that is being perfected but it most certainly is on a very limited scale. The breed of cattle plays the most important role in determining the quality of beef. Start with a superior breed and you can grow that into a high quality product.

One year the beef wasn't nearly as good as it normally was. The brothers called the farmer and within an hour he was at our house inspecting the frozen packages. Within a minute, he said that wasn't his beef and it was off to the butcher shop. The butcher took a look and readily agreed that one of his employees made a mistake and had processed the wrong steer. The butcher immediately bought another steer from the farmer, took back all the beef from the brothers and replaced it. It was back to normal and everyone was happy again.
