I am having trouble finding good tasting sausages in Udon or Sakhon...I have tried several different packs of Thai sausage but the dogs get to eat them...If someone can tell me where to try for better sausages I would be

T-Mart / T-Bar would be my choice for pork sausages, though, TBH, I only get the my Cumberland's there, and damn tasty they are, would expect the same from other versions on offer.

I make my own sausages (patties), really too simple and spiced to my preference, as I find Brit versions bland. As soon as I try making Cumberlands, I may stop buying them, but need a good reason to pop in and chit chat with Steve & Mali, so maybe not.

Mudguard to improve the taste of Thai Sausages you should use an old Chiang Mai area recipe.

1 Take pack of Thai Sausages and feed to dog
2 Take dog and make dog into sausages
3 Cook to taste and add to menu as "special of the day"

For vendors, Besides T Mart, and same source (PrimeFood) as Chris' Bar, but cheaper than Chris', there is only Fuzzy and Gourmet Meats, as the other one , doesn't seem to have a supplier now and most expensive anyway.

Dean PapaFarang, when he gets around to making some, but sells out same day, but he's in UK.

Anything else is packaged, sold at chains, and not cheap, if price is a consideration. The other reason I make my own, taste great and 150 baht a kg.

Strongly suggest making one's own.......Google is your friend, plenty of recipes to test, even copycat recipes for favorite brands.

Where would one find sausage casings in Udon Thani.

That is the difficulty I think lassebasse.

The alternative is to do as LA does & make 'patties' (also known as Scottish sausages in some parts) or to wrap sausage shapes in silver foil.
These can then be mainly cooked while in their silver casing & then finished off for a few minutes uncovered to brown the outside..

Makro have them in the freezer section where all the pork meats are.
